Baked Striped Bass Moroccan Style

  • 1 whole striped bass
  • 1/2 cup olive oil
  • 2 tbsp. ground cumin
  • 2 tbsp. paprika
  • 1 tsp. salt
  • 1 lb. assorted mild chile peppers
  • 4 cloves garlic, minced
  • 2 tbsp. minced ginger
  • 1 lemon

Mix olive oil with cumin, paprika, salt, garlic, and ginger. Rub the mixture over the fish, inside and out. Slice peppers and spread around the cavity of the fish. Slice the lemon and arrange on top. Wrap in foil and bake in 400 oven for 10 minutes per inch of maximum thickness of the fish, removing the top of the foil for the final 20 minutes.
