Braised Green Beans, Tomatoes, and Onions

This very simple classic Turkish recipe may be served either hot or at room temperature.

  • 1 1/2 pounds greens
  • 1 large onion
  • 1/2 cup olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon sugar
  • 1 large (28-ounce) can peeled tomatoes

Trim the beans, peel and chop the onion, and crush the tomatoes by hand. Heat the oil in a pot large enough to hold all ingredients. Saut&#eacute; the onion over high heat for two minutes, and the green beans and continue cooking, while stirrong continuously, for five minutes more. Add salt and sugar, mix well, add the tomatoes, and cook for another five minutes. Cover the pot, with the lid slightly ajar, reduce the heat, and simmer until the beans are very tender, about thirty minutes.
